Fried Rice and Beef Sausages

Ingredients
4 cups leftover cold jasmine white scented rice
1 small white onion, chopped finely
1 clove garlic, chopped finely
2 eggs, beaten
1 cup shredded cooked chicken (leftover from last night)
1 Chinese sausage, sliced thinly
4 spring onions, sliced thinly
1 200g Spam Luncheon meat, diced
1 tablespoon soy sauce
cooking oil

Procedure
Cook eggs to make a thin omelette.  Remove omelette from pan and cut into thin strips. Set aside.  Using the same pan, stir-fry garlic, onion, cold cooked rice, chinese sausage, shredded cooked chicken, and diced spam luncheon meat, omelette strips, and soy sauce for 30 seconds until well combined and heated through. Garnish with spring onions and serve.

Beef Sausages – Cook them slowly so they cook all the way through and turn frequently. Cook onions very slowly on a very low heat.
